Easy Chicken Gumbo Recipe

2 tablespoons canola oil4 chicken legs¼ cup chopped onion¼ pound gluten-free andouille sausage cut in ¼-inch slices1 rib celery, finely sliced1 small green pepper, finely chopped½ cup petite diced tomatoes, including juice2 garlic cloves, smashed3 cups gluten-free, low-sodium chicken broth1 teaspoon tomato paste2 bay leaves2 teaspoons paprika1 teaspoon chopped fresh thyme or ½ teaspoon dried1 teaspoon chopped fresh basil or ½ teaspoon dried½ teaspoon salt½ teaspoon freshly ground black pepper1 can (12 ounces) okra, okra pieces halved, drained1 teaspoon file powder2 tablespoons cold water1 cup cooked, diced dark meat chicken4 ounces fresh or canned crab meat2 cups hot cooked white rice2 tablespoons chopped flat-leaf parsleyDIRECTIONS : 1. In a Dutch oven or other deep, heavy pot with a tight-fitting lid, heat the oil over medium heat. Add chicken in one part of skillet and put onion, sausage, celery and green pepper in separate area of skillet. Cook until chicken is browned on all sides. Stir vegetables and sausage occasionally so they brown on all sides, transferring to plate if they finish browning before chicken. Stir in tomatoes, garlic, broth, tomato paste, bay leaves, paprika, thyme, basil, salt, and black pepper (and return browned vegetables to skillet, if removed). Gradually bring to boil and reduce heat. Simmer gently, uncovered, 15 minutes.2. Add okra to pot and continue to simmer 5 minutes more. In a small bowl, blend file powder and cold water. Add to soup and stir briskly. Add chicken and crab meat and heat to serving temperature over medium heat, but do not boil. Spicy Peanuts
For a on the go snack, sprinkle cayenne pepper on top of one ounce of dry-roasted peanuts and enjoy

Grilled Chicken and Spinach Salad
Grilled Chicken and spinach salad with cherry tomatoes, feta, and olive oil or a vinaigrette.

Chicken Stuffed Pepper
Cook chicken, then let cool. Cut top of bell pepper off and stuff with chicken and low fat cottage cheese, then top with salsa and serve.



Tuna Salad
Mix tuna with low fat Italian salad dressing, mix in chopped celery and chives and enjoy.

Veggie Patty with Mushroom
Use a low fat veggie patty (like Amy’s or California Brand) or make your own. Cook burger patty and a full portobello mushroom, then stack and serve.

Fruity French Toast
Whisk a large egg with a spoonful of milk. Dip piece of break into mixture and covering both sides. Cook on frying pan until golden brown. Top with fresh fruit.

Coleslaw With Dried Cranberries And Apples
Chop red and green cabbage, then mix with balsamic vinegar, Dijon mustard, lemon juice, low fat plain yogurt and pepper to taste. Stir in dried cranberries and sliced apple.

Salsa Wrap
Mix fresh salsa (make sure it is not high in sugar or fat-the best choice is home made!) with your choice of lean meat (tuna, chicken, lean beef, turkey, pork) and wrap up in a whole wheat wrap, or even better, make it a lettuce wrap! You can use regular tomato salsa or switch it up and use a mango or other fruit salsa

Chicken, Walnut and Mango Salad
Cook chicken and toss with salad greens, mango slices, walnuts. Squeeze lime (lemon or orange) juice on top and season with pepper to taste.

Of course you don’t do this consciously, but you still do it if you use ‘Accent’ or any other form of MSG in your cooking. I know how hard it is for people who are used to flavoring their food with ‘Accent’ to leave it out; they claim that the food does not taste the same, that it does not have a good flavor. Let me tell you the reason for this statement: You are addicted!

That’s right: MSG is a poison that messes with your brain as much as with your taste buds. There is so much scientific evidence for this, that I am surprised and actually angry that it has not been put on a health-risk list, or even better banned from use in food all together. MSG stands for “Mono-Sodium Glutamate” and is everything but a natural additive to food, yet you find it in almost all processed foods: yes even in coffee (Starbucks) and hundreds of items from Campbell’s soups to Top Ramen to Betty Crocker Hamburger Helpers, almost all potato chips, salad dressings (especially the so called healthy low fat ones) and Swanson frozen prepared meals, and the list goes on and on.

As I said, even if you don’t actually flavor the food you prepare from scratch in your own kitchen with Accent, or any other flavor-enhancers, you get MSG from almost any packaged food you buy off the shelves at the supermarkets.

Do you know what purpose MSG had for over thirty years? It was used to fatten up rats in laboratories in order to test diabetes and obesity. Newborn rats were injected with MSG, which tripled their amount of insulin response by the pancreas and made they obese in no time. This may be a necessary way to study the effects of diabetes in rats, which the pharmaceutical companies are interested in to create medicines for humans, but why is it in our food?

MSG is added to food because it has an addictive effect, in other words, you want to eat more of the food that contains MSG. The Glutamate Association, which supports the addition to MSG to foods claims, that it helps the elderly to eat more! That may be o.k. for stimulating the appetite of our seniors (I am almost there and do not find it o.k. for me!), but what does it do to our middle aged, still young, and children?

Is it any wonder that the problems with weight are so prevalent in our communities, which includes our children? The FDA has set no limits on how much can be added to our food supply, and consequently MSG has been added to a larger and larger degree in more foods than you can imagine. Our children become more addicted to Fast Food (Junk), and even your defenses are dulled to giving in, because you eat the stuff yourself and became addicted as well.



How can you tell your child not to eat the chips, cookies, or “children meals”, if you crave the stuff yourself? You know, I am not angry with you, but with the agencies (government) that allows the greed of big food companies to put a scientifically proven addictive substance in your food, in order to sell more of their products and be competitive, with the devastating side effects of ill health. What is the price on your health, your life?

In hundreds of studies since the early 60th, it has been established that MSG plays a major role in the growing obesity problem. But it does not stop there, many common diseases like Diabetes, Autism, ADHD, Migraines, and even Cancer have been linked to this slow poison called MSG. There are countless study papers on the Internet at the National Library of Medicine: http://www.pubmed.com, where you can read about the devastating effect that MSG has on your health and wellbeing. I also recommend a book by John Erb: ” The Slow Poisoning of America”, just in case you are still not convinced that you may be slowly poisoning your children and yourself. If you don’t start reading labels, and stay away from Fast Food, you, and especially your children may be doomed to obesity and it’s many health issues by an addictive food additive. Don’t let it happen.

Where you unsuccessful in your efforts to drop some weight? Even if you have tried everything to shed the extra pounds, you may not have been able to because MSG kept the fat sticking with you by keeping you addicted to unhealthy foods. If you say: O.K. I will stop using Accent and other Flavor enhancers and read labels, and don’t eat Fast Food (that includes Kentucky Fried Chicken, which is loaded with MSG), you may have an uphill battle. Why? Because you may not even know how addicted you have become to the cravings of the foods containing MSG. You may go into withdrawal symptoms from cutting it out suddenly. I will help you with this if you call me. Otherwise become smart; maybe create a support group with other concerned people and neighbors. Even write to your government, the Ministry of Health, demanding to send out warnings about this health destroying substance; shouldn’t they be concerned about the health of their populace? We don’t produce it in the Bahamas; it comes from the mighty United States, shipped right into our country and ending up in our bodies. Now that you know, or have been reminded again, your conscience will “tip on your shoulder” the next time you grab a food laden with MSG. Listen to the wisdom of your mind and act.

Networking also means strengthening your relationship with your suppliers. They function as your backbone, to a certain degree. Now that your business is growing, make sure you focus as equally on your catering wholesalers and suppliers. Recipe For A Quick And Easy Saucy Chicken Stir-Fry

Have you had a long day?  Are you rushing from work to athletic practice, games, piano lessons, etc?  You can still make a decent quick meal at home in a matter of minutes. There is no need to stop by a fast food drive-thru when your family can eat a good meal at home.  If you follow my blogs,  you know I believe Americans should cut back on the fast food restaurants and eat more meals at home.  This stir-fry helps to make that happen for busy families. This recipe calls for chicken but you could substitute 3/4 pound of cleaned shrimp for the chicken.  If you substitute shrimp, reduce the frying time by a minute or two.

QUICK SAUCY CHICKEN STIR-FRY
 
3 tbsp canola oil
1 cup broccoli flowerets
1 cup cauliflowerets
3/4 cup 2-inch julienned carrots
1/4 cup sliced green onion
1 garlic clove, minced
1 lb boneless skinless chicken breasts, cut into thin strips
1/2 cup mayonnaise or mayo type salad dressing
1 tbsp soy sauce
1/2 tsp ground ginger
1/2 tsp crushed red pepper flakes, optional
Hot cooked brown rice to serve 4

Heat 1 tablespoon of the canola oil in a wok or large skillet over medium-high heat.

Add the broccoli, cauliflower, carrots, green onion, and garlic and stir-fry about 5 minutes or until the vegetables are tender. Remove the vegetables from the pan.



Add the last 2 tablespoons of the oil and the chicken strips to the pan. Stir-fry the mixture about 5 minutes or until tender. Reduce the heat and return the vegetables to the pan with the chicken. Add the salad dressing, soy sauce, ginger, and red pepper flakes, if using. Simmer one to two minutes, stirring occasionally.

Serve over the hot rice.  (Minute Rice is perfectly fine!)

Yield: 4 servings

Put half of the butter or oil in a large skillet over medium heat. When the butter is melted or the oil is hot, add the leeks and cook, stirring, until softened, about 5 minutes. Add the wine, stock, and herb; bring to a boil and let bubble for a minute or two.2. Add the chicken, turn the heat down to medium low, cover, and simmer until the meat is barely cooked through, 5 or 6 minutes. Remove the chicken with a slotted spoon and keep warm. 3. Turn the heat up to high and cook the sauce rapidly, stirring occasionally, until just about ¾ cup remains; this will take 5 to 10 minutes. Lower the heat to medium low, add the lemon juice, then stir in the remaining butter or oil, a bit at a time. I prefer using red peppers just for the colour value! Once your onions and peppers are nicely heated, I like my slightly crunchy and not over cooked, add a can of chopped tomatoes and bring to the boil. Add some olives and I particularly like capers in my recipes with pasta. You can also season with olive oil and basil and any spices you particularly fancy. Hot peppers are a good choice if you’re feeling brave.A great seasoning idea is to mix in chopped garlic, crushed ginger and some finely chopped hot peppers (including seeds) with some olive oil. Add salt and pepper to taste and voila – a great and spicy seasoning which goes great with pasta recipes and salads alike! Mix in the seasoning after you have thrown in the pasta to the main sauce. Serve and enjoy!

Researchers have found that most autistic children, especially those with late onset autism (emergence of autism symptoms only after/ or around three years of age or later) respond well when gluten and casein are strictly eliminated from their diet. Gluten is a protein found in everyday food that contains wheat, oats, rye, and barley. Where else another protein compound called casein is commonly found in dairy milk and products such as yoghurt, cheese, ice cream and others.

Furthermore, many autistic children have been known to develop intestinal problems at the same time they are losing acquired skills such as language. This suggests that gut health can play a major role in the development of sensory skills. Here is an interesting news: The brain and gut are derived from the same tissue in the fetus. The gut has a vast network of nerves and neurotransmitter in its tissue lining that is directly linked to the brain. In a study done on 12 late onset autistic children with an early history of normal development followed by a loss of acquired skills: All of they developed diarrhea and abdominal pain. This highlight the link between the gut and the brain, as the development of digestive problems was correlated with the loss of skills.

Studies suggest that both autistic children and children with learning disabilities suffer from a condition called leaky gut. In a normal gut, the intestinal cells are held firmly by tight junctions that prevent large molecules in the gut from entering the blood stream. In the leaky gut syndrome, the abnormality in the permeability of the gut lining allows large molecules such as bacteria, yeast, toxins, and food particles such as gluten and casein to pass from the gastrointestinal tract into the blood stream and ultimately into the brain. As a result, mood, behavior and learning skills may be affected. In addition, intestinal functions such as digestion and absorption of nutrients will also be impaired.

It is believed that an overgrowth of microbes such as yeast in the gut can cause the intestinal mucosa to become inflamed. This upset the intestinal lining and the tight junctions become “leaky.” The gut losses barrier function, so most micro nutrients gets are blocked outside (causing nutrients deficiency), while toxins and antigens easily enter the system. Sometimes we ourselves can create an unhealthy intestinal ecosystem by consuming too much sugar, as our society seems to be doing. This will encouraged an overgrowth of bugs, especially yeast as it thrives on sugar.

Nutrients such as LCP (long-chain polyunsaturated fatty acids) which are important for brain and visual development, will be deficient. The brain itself is comprised of 60 percent fat and major components are LCP every human thought and action that originates from inside the brain can only occur when the brain receives nutritional support of the LCPs. DHA is one of the components of LCPs that is vital for cells in the retina. This may affect vision and cause difficulty in reading and other problems. Supplementation can help in some cases.



Often, children with autism have a problem with a lack of enzymes, making the situation worse. The enzyme required to breakdown peptides from milk and peptides from gluten is deficient. Unhealthy gut causes these partially digested peptides to leak into the blood system and into the brain. These peptides are known as “Opioid peptides,” will cause toxic effect in the brain and interfere with the receptors of neurotransmitter called enkephalins. Opioid peptides are believed to lead to worsening of symptoms found in autism.

Though autism is a complex disorder, some will benefit with dietary changes. This special children needs to be put on a gluten-casein-free diet for at least six months. Children who does not benefit from such elimination diet for six months should revert back to a normal diet. Casein is a main component of milk protein. It will have to be replaced by non-dairy products, such as soy milk products, rice milk or almond milk. Gluten (found in wheat, oat, rye and barley) can be replaced with tubers, (potatoes, sweet potatoes, yam, tapioca), root vegetables (parsnip, turnip, radish), peas and beans.

Leaky gut syndrome is a condition not a disease, so you need to treat it by supplementing the diet with glutamine, probiotics and whey protein. Glutamine is the main source of energy for intestinal cells. Probiotics is helpful to improve the microflora and mucosa. Whey protein is also good to treat the mucosa. The treatment is to naturalize the situation in the gut. Increase the level of friendly bacteria to fight yeast and create a healthy mucosal lining with better permeability.
